i was spoilt by a dear friend for christmas with the pete evans 'my kitchen' cookbook , i practically squealed with excitement! last week i made one of the most delicious salads ever (big call i know) and i haven't been able to stop telling people about it. i've had so many requests from friends to give them the recipe so here we go (i adjusted it slightly):
ingredients:
100g wild rice
100g (1/2 cup) quinoa
2tbsp olive oil
1 brown onion sliced
600g unsalted pistachios
1 carrot, grated
2 cups baby spinach leaves, thinly sliced
4 spring onions, thinly sliced
100g dried cranberries
1 handful mint
dressing:
90ml olive oil
finely grated zest and juice of 1 orange
2 teaspoons lemon juice
1 garlic clove, minced
preheat the oven to 180 degrees celsius.
rinse the rice, and cook in salted boiling water for 45 minutes as per the directions on the packet. at the same time, cook the quinoa as per the directions on the packet.
heat the oil in a small fry pan over a medium heat and cook the onion, stirring occasionally, for 10-15 minutes, or until soft and caramelised. at the same time, place the pistachios on a baking tray and cook in the oven until lightly toasted. roughly chop.
to make the dressing, combine the ingredients and set aside.
place the quinoa, rice and onion in a large bowl, add the remaining ingredients, drizzle with the dressing and mix together to completely coat with the dressing.

i served this with leftover christmas ham. it would be equally tasty with salmon, white fish, chicken or as a side to a delicious bbq.
